Hey foodies!! Here’s a taste of a really nice Jamaican sweet dish. It is quite simple to make but get ready for the delicious aroma of coconut and spices that will fill your kitchen.

Liquid Ingredients:

1 large egg

1 stick unsalted butter, melted

1 tbsp coconut oil (optional)

2 1/2 tsp. vanilla

1/8 tsp Almond essence (optional)

1 – 2 tsps white rum (optional)

3/4 – 1 cup coconut milk

1 cup full fat cow’s milk

3/4 cup soft Brown sugar plus

1/4 cup white sugar (used in video for testing purposes but I recommend just using a TOTAL of 1 cup soft brown sugar if you want a richer colour)

Dry Ingredients:

3 cups all purpose flour

2 tsp baking powder

1 1/2 tsp. salt

3/4  tsp freshly grated nutmeg

1 1/2 tsp ground cinnamon

1/4 tsp of ground cloves

1/4 tsp ground allspice

1/4 tsp ginger powder

1/2 cup rum soaked raisins (optional)

1 1/2 – 2 cups shredded desiccated coconut (use freshly grated if you have it)

Honey to brush on top
Cherries for garnish

Store in a sealed container to prevent it from drying out.
