🇻🇨St Vincent Sweet Potato Pudding-(With Tania)

If you are in a foreign country make sure you use the right sweet potatoes or your pudding will not form.
Recipe
2 cups grated potato
1/2 cup tania
1/3 cup grated coconut
1/2 cup brown sugar
2 tablespoons of ginger
1 tablespoon of melted butter
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
vanilla extract/essence
coconut milk
Preheat oven and bake at 350 degrees for 1 hour 45 minutes
If you want to eliminate extra starch used pumpkin or carrots. Also, flour and eddo can be added.
If your stove is a bit slow you can also increase the temperature in the middle of the baking to 375 degrees.
I used an 8 by 8 baking dish, if your pudding is cracking in the middle, take a spoon and smooth it out and put back to bake. This is because the pudding needs room for baking. 9 by 9 baking pan/dish works perfectly to avoid this.
