HOW TO BAKE JAMAICAN SWEET POTATO PUDDING

RECIPE FOR SWEET POTATO PUDDING

3lb sweet potato (firm)
2 cans coconut milk or 2dry coconut
2 cups brown sugar
1 cup flour
3/4 cup refined cornmeal
2tbs vanilla(add a little more if you like)
2tbs cinnamon
2tbs nutmeg
2tbs salt
2tbs baking powder
1stick melted butter
1/4cup mixed fruits (optional)
1/4cup coconut (optional)
A little white rum (optional)
A little browning for a darker brown not too much just a pinch

Bake in a pre heated oven at 360 °F
for 1/2 hour
