How to make Jamaican Coconut Drops

SAFETY FIRST:

When breaking the coconut I keep it covered in a kitchen towel or plastic bag to prevent splinters from flying around. My hubby helped me break the coconut in the video, but if you have no help remember to watch your fingers because you have to really pound away with that hammer.

If you’re very inexperienced please use gloves while handling the coconut or use a kitchen towel to hold it sturdily when removing the husk.

INGREDIENTS:

Recipe Yields 10 – 12 drops

About 3 1/2 cups Water
Approximately 1/4 tsp Salt
1 cinnamon stick
4 cups diced coconut
3 tbsps ginger (more or less)
4 1/2 cups Brown sugar
