Cornmeal Pudding
INGREDIENTS:
3cups Cornmeal
1/2cup All-purpose Flour
Salt to taste
1tsp Nutmeg
1tsp cinnamon
1/2cup Brown Sugar
1/2cup White Sugar
1/2cup Raisins
2cups Coconut Milk
2cups Water
2tbsp Vanilla
1/2cup Room Temp Butter

METHODS
1. Preheat oven to 350°F
2. Combine all liquid ingredients in a saucepan and bring to a boil and add raisins to rehydrate
3 Remove liquid ingredients from flame
4. Mix together Cornmeal and flour And then gradually add the liquid ingredients and constantly stirring to remove all lumps from the mixture.
5. Pour mixture into the cake pan and bake for 1hrs.
6. Reduce the temp in the oven to 200°F before putting back the pudding in to form the custard.
7. Pour custard on top and put back in the oven for 20 minutes.
8. Remove from oven.

Custard
1/2cup Coconut Milk
1/2cup Sugar
Baking All Spice
Combine all ingredients together and mix until sugar dissolved.

Coffee Sauce
1/2cup Condensed Milk
1tbsp coffee of choice
Mix together until coffee dissolved
Serve on pudding
