Stew peas and pigtail is a dish of legend in Jamaica. The flavours and preparation seems complex with its bountiful flavor but it’s pretty simple to do. In this video I’ll show you how I cook it using some of the traditional methods and my own style. Remember when cooking there are come details that make a dish a dish but feel free to make the dish for YOU.

ingredients (Adjust to your liking)

Pigtail (approx 1.5 lbs)
red kidney beans (half proportion of pigtail)
Thyme (4 bushels)
garlic (1 med clove)
onion (1 small)
pimento (10 seeds)
clove (4)
coconut oil (2 tbl spoon)
Escellion (2 stalks)
Ginger (1 tablespoon)
Scotch bonnet pepper (1)
coconut milk (1 thick cup)

To remove salt from pigtail first wash thoroughly and add a lot of water to pressure cooker. The more water the more salt will be extracted into the water. If pigtail remains salty when you check add more water and continue to pressure cook. (I use this method as not all pigtail brands have the same salt content, you can adjust flavor easily with this)
