Jamaican Banana and Caramel Pudding recipe, delicious dessert, easy peasy, impress your friends!

Here is the recipe for my Jamaican banana and caramel pudding as seen on my husband’s vlog Sean’s World.

For anybody who has not seen it on Sean’s vlog, this is an extremely simple dessert that has a light banana sponge over a glossy caramel sauce, that will delight and impress your family and friends! A great way to use up an over ripe banana, you can use Malibu instead of rum, or leave out the rum altogether if you are making for little ones.

The ingredients:

For the batter

175g self raising flour
1 tbsp baking powder
pinch salt
80g melted butter
300ml coconut milk
1 tsp vanilla paste
100g caster sugar
1 ripe banana
1 egg

For the sauce

150g dark brown sugar
4 tbsp golden syrup
1 tbsp dark rum
150ml boiling water
