3 cups fined cornmeal
3/4 cup all purpose flour
1 tsp salt
1 and 1/2 cups brown sugar
6 cups coconut milk ( I used homemade but canned is fine).
1 cup coconut trash from milk (optional)
1/2 tbsp vanilla extract
1/2 tbsp ground cinnamon
1 tsp allspice
1 tsp grated nutmeg
Unrefined coconut oil to grease baking pan
** You can also add raisins if you want.
If after the 1 hour and your pudding is set and dry at the top mix about 1 cup coconut milk with sugar and cinnamon and pour over pudding then bake again for 30 minutes. After pudding cools, keep it in the refrigerator to prevent it from spoiling.
🍃 Bake at 375 degrees F for 1 hour and 30 minutes
