Jamaican Sweet Potato Pudding || Authentic Plantbased Eats

Ingredients:
2 medium size boniato potato( 2 1/2 cups grated)
1 1/2 cups unbleached all purpose flour
3/4 refined cornmeal
2 1/2 cups coconut milk( I use homemade but canned is
fine). Save 1/2 cup to make custard.
2 tsp grated nutmeg
1 tsp allspice
2 tsp ground cinnamon
1 tbsp vanilla extract
Small piece of grated ginger
1 tsp salt( I used Celtic salt)
11/2 cup brown sugar
Coconut oil to grease baking pan or any other oil/ grease of choice.
*Raisins are normally added but I’m not a fan of raisins. If you like you can add the raisins.
